The power of a good meal can often be underrated. We often forget what it's like to savor a good meal without our cell phones, TV, or computers to distract us. In our home, dinner is the only meal of the day that we manage to sit down and eat together since Justin often eats both breakfast and lunch at the training center with the team. This is why when dinner time comes around, whether it's a simple or complex recipe, we like to take the time to prepare something delicious. The pleasure of good food is not in the fast, cheap, or practical. The pleasures of good food is in the memories created around it, infinite flavors combined in unforgettable manners, trust in quality and above all good times. I wanted to share with you this recipe I tried last week for the first time. It's the first time we've had seafood at home and to be honest, it was awesome! I hope you enjoy it. 

RISOTTO

1 Cup of Arborio Rice  •  2 Tablespoons of Olive Oil   •  1/2 cup of Sweet Onion finely chopped  •  2 cups of Chicken or Veggie Broth  •  1 cup of White Wine  •  Garlic to taste (optional)  •  Pureed Basil and Spinach to taste  •  Grape Tomatoes to taste  •  Green Peas to taste

1. Saute onion and garlic in olive oil for about 3 minutes?

2. Add rice, stirring for about 2 min?

3. I like to combine the broth and wine in a measuring cup and mix it. Then Stir in broth/wine mix, about 1 cup at a time. Keep stirring till broth and wine absorbs into rice, then add the second cup. 

4. Once the second cup of broth/wine is fully absorbed add in the spinach/basil puree, the tomatoes, green peas and then the third and last cup of broth/wine.

5. Stir away until all liquid is absorbed.

**Note - the veggie puree can be done with any vegetables you have in hand including swiss chard, zucchini, squash (orange risotto!) etc. The wine/broth proportion can be played with depending on how strong you want the wine taste. I did 1.5 cups of broth and 1.5 cups of wine because I didn't have enough broth and it tasted great. 

SCALLOPS

Olive Oil to taste  •  Butter to taste   •  Rosemary to taste  •  Red Pepper flakes to taste   •  Salt & Pepper to taste

1. Salt & Pepper the scallops.

2. In a pan heat olive oil on "high". Once it's close to smoking add butter and let it melt.

3. Add rosemary and red pepper flakes and stir in with butter/olive oil mix. 

4. Add scallops to mix and saute for a minute on each side. Keep flipping them until both sides are golden.
